During this 2020 lockdown, Don and I have found ourselves looking for a little bite of something sweet after dinner. Since neither of us usually have a sweet tooth, we don’t have dessert-like food items in the flat. This Microwave Chocolate Mug Cake is my go-to recipe for a super-quick treat. It takes 1 minute to mix and literally 1 minute to cook (in the microwave). It is spongy on the outside and gooey on the inside – and you can decide how healthy you make it! Use oat flour or almond flour, Wazoogles Protein Powder and Silan date syrup for a healthy, gluten-free version OR cake wheat flour, coffee-flavoured Cocoafair chocolate and Natura’s Dark Muscovado Sugar for an indulgent, rich cake.
Microwave Chocolate Mug Cake
This Microwave Chocolate Mug Cake is my go-to recipe for a super-quick dessert. It takes 1 minute to mix and literally 1 minute to cook (in the microwave).
Ingredients
- 1 ripe banana
- 6 tablespoons flour (cake wheat, self-raising, oat or almond)
- 2 tablespoons Cocoafair cacao powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons Natura's Dark Muscovado Sugar or Silan date syrup
- 120 ml boiling water
- 1 teaspoon coconut oil
- 3 tablespoons dark chocolate chips or chopped dark chocolate
Instructions
In a microwavable mixing bowl, mash the bananas until smooth.
Melt the coconut oil in the hot water.
Add the dry ingredients to the mixing bowl, followed by the wet ingredients and 2 tablespoons dark chocolate chips or chopped dark chocolate.
Mix into a smooth batter and scoop into two microwavable mugs or ramekins.
Top with extra dark chocolate chips or chopped dark chocolate.
Microwave for 1 minute and check the consistency (it depends on the watts of the microwave and the flour you are using). If it is still way too gooey, microwave for another 15 seconds at a time.
Grab a teaspoon and dig in!
Notes
Without the choc-chips, the cake is a bit dry so don't leave this out. Different flour variation might require more water. Add 1 tablespoon of extra water at a time untill you reach a cake batter consistency. Variations: - Add a tablespoon or two chopped nuts. - Add a tablespoon of Wazoogles Chocolate, Vanilla or Coffee protein powder.
