Coffee Chia Protein Pudding

While I am training for the 2025 Comrades Ultra Marathon, I am working hard to up my protein intake for my muscles to recover quickly. This Coffee Chia Protein Pudding is delicious, super quick to make and packed with various sources of plant-protein. I enjoy it as a post-run breakfast, an afternoon sweet snack or I keep it in the fridge and take a biteful throughout the day.

Made with Smul Café Latte protein powder and their Cacao Almond protein bar, this dreamy combo delivers 33g of protein—not even counting the protein from the chia seeds and peanut butter! Plus, the cultured coconut yogurt adds probiotics to keep your tummy happy.

What I love about Smul’s protein powder is that it isn’t overly sweet—it actually has 0% sugar. The best part? You can make it the night before and grab it on the go the next morning after training!

Coffee Chia Protein Pudding

Start your day with this protein-packed, gut-friendly, and ultra-creamy coffee-chia pudding!

Ingredients

  • 3-4 tbsp chia seeds
  • 37g (1 serving) Smul Café Latte protein powder
  • 1 cup almond milk
  • 3 tbsp cultured coconut yogurt
  • 2 tsp runny peanut butter
  • 1 Smul Cacao Almond protein bar, chopped (you can also use chopped nuts or dark chocolate)

Instructions

In a bowl, mix the chia seeds and protein powder with almond milk.

Refrigerate for 20 minutes to set.

Scoop the chia pudding into a glass jar.

Top with yogurt, peanut butter, and chopped protein bar.

Craving extra sweetness? Drizzle some maple syrup between the layers!
