Creamy blueberry smoothie packed with omega-3 from flax and walnuts and protein-rich from tofu. Ready in 10 minutes - it is the perfect energizing breakfast!
Ingredients
- ½ cup flax seeds or 2 tablespoons ground flax seeds
- ½ cup walnuts
- ½ cup tofu
- 2 cups frozen berries (blueberries, strawberries, or a berry mix)
- 2 cups plant milk (almond, soy, oat, etc.)
- 1 Tbsp maple syrup or agave syrup, or 4 dates to sweeten
Instructions
Add the flax seeds (or ground flax) and walnuts to a blender. Blend until they form a fine powder.
Add the tofu, frozen berries, plant milk, and your choice of sweetener. Blend until smooth and creamy.
Pour into glasses, top with a few extra frozen berries if you like, and enjoy cold.
Notes
If you prefer a thinner smoothie, simply add a little more plant milk until you reach your desired consistency. Adjust the syrup or dates according to your sweetness preference.
